After the modern plaster was removed from the walls of the kitchen and the cellar passage, it was discovered that some of the ca. 1812 plaster survived on the walls of the North Cellar Passage.  Surprisingly, it appeared that it consisted of only one coat of plaster and was unlike the two or three-coat plasters found elsewhere in the house.  Why was the kitchen only given one coat of plaster?
